What to make for the Apple Festival?  Last year Ken Rice made a ‘Creamy Apple Chicken Curry’.  It was amazing!   It is a quick sauté of vegetables, chicken and apples – tied together with a creamy curry sauce.  Served over rice or egg noodles.  So delicious.  Chef Ken invited me to share his recipe with you:

Ken’s Creamy Apple Curry Chicken

1/4 cup (1/2 stick butter)

1 large yellow onion, cut into 1 inch chunks

1 green bell pepper, cored and cut into 1 inch chunks

1 red bell pepper, cored and cut into 1 inch chunks

1 cups cauliflower florets

1 pound boneless, skinless chicken thighs, cut into bite-size cubes

3 medium apples, peeled, cored and diced

2 Tablespoons curry power (hot or mild to taste)

1 teaspoon salt

1/2 teaspoon ground black pepper

3 tablespoons all-purpose flour

1 1/2 cup milk

1/3 cup dried cranberries

1/3 cup toasted slivered almonds

In a large, deep skillet over medium-high heat, melt butter.  Add onion and sauté until tender, about 6 to 7 minutes.  Add both bell peppers, cauliflower and chicken.  cook until vegetables are just tender and chicken is cooked through, about 10 to 12 minutes.

Add apples, curry power, salt and pepper.  Cook until apples are just tender, about 3 to 5 minutes. Sprinkle flour over everything, stirring to coat.  Add milk and cranberries, stirring and cooking until the sauce comes to a simmer and thickens.  Serve sprinkled with toasted almonds.    Serves 4

So, if planning on this for the potluck, you might want to make a bigger recipe so we all get a taste!  So yummy!  Thanks Ken!

One of these just might have YOUR name on it!  I’ll update my website real soon for you, but thinking some of these will be spoken for before I get that far!

After 7 stints in his heart, it was high time for Wayne to retire and slow down a bit.  He and Anne are one of those couples that I have shown cabins to several times over the years.  They take off in the summers and go to the Sierra’s, coming back with even a stronger desire for their very own piece of paradise that they can escape to more often.  When this cabin came up, I just knew their long wait had paid off.  Living in San Diego, Palomar Mountain is the perfect retreat.  A long walk in the woods, towering trees, the chorus of birds, and the sounds, and scent of the forest are right here within a short drive.  Ah, Paradise.  But, don’t let this photo fool you.  It is staged.  Wayne and Anne are one of those couples that love to be working around their cabin, keeping it pristine, enjoying every minute, or gladly helping friends with their cabin-to-do-lists.   Give them a warm welcome when you see them hiking Birch Hill, Crestline, and ’round the Mountain!

It was bitter-sweet for the family to turn over the keys to the new buyer of Happy Holler.  They had decades of nothing but wonderful family memories.  Those kids in the vintage photo?  They are the adults pointing to the new owner on those same steps, now 40+ years later saying:  “Happy Holler is yours, Nick!  But we’ll be back to check on the progress of your renovation!”

The new owner, Nicolas, was raised in Montreal, Canada and spent his winter weekends skiing at his family cabin in the Cantons de l’Est of Quebec. His love for nature and carpentry are met at Happy Holler. You can follow the progress of his renovation at www.happyhollercabins.com  He said things should be ready next year for guests.  We’ll be watching and cheering him on!  Welcome to the Mountain Nick. We’re glad you’re happy with your holler!

Palomar Mountain State Park is very excited about this year’s Apple Festival which will be held Oct 27th 11a.m. to 4p.m. We have planned more fun activities for kids and square dancing for everyone!

Just a reminder that the day use fee will be waived and we welcome all of our friends & neighbors to bring their favorite apple recipes to share with everyone or to bring any left over apples for cider pressing. We hope to see your smiling faces this year!

  Extras Needed – Film Crew Shooting a Classical Music Video on Palomar Mountain

A film crew from San Diego will be shooting a classical music video on Palomar Mountain Friday, October 11 and Saturday morning, October 12.

The piece of music is called “Misa Azteca,” a modern, symphonic oratorio that has been performed to sold out audiences in Carnegie Hall (twice), the Sydney Opera House, Walt Disney Concert Hall, St. Denis in Paris and recently at the Festival of the Aegean in Greece.

Musicians from San Diego and Los Angeles will be traveling up the mountain including percussionist Chris Garcia who tours with Frank Zappa’s Mothers of Invention and tenor Joey Molina who has sung in concert halls around the world.  Misa Azteca was written by film and concert music composer Joseph Julian Gonzalez, a professional composer of 24+ years.

Would you like to join us as an extra?  Come on out!   We’ll ask the men to be dressed in black pants and a black shirt and women to be in black dresses (long preferred, but can work with short dresses) or black skirt and black top.  We could use extras 16 years or so and older.

General meeting time is 3pm at the Round House on Palomar Mountain, 760-742-3853, but call first before heading there.  We’ll be shooting till dark, so come out and we’ll coordinate.

As the temperatures drop, many of us love to slip away to Borrego Springs to soak up some Fall or Winter sun, take in some fun events, and enjoy their restaurants.  Borrego is just an hour away, and a beautiful drive.  The end of the month is Borrego Days!

(Let’s see, you can visit Borrego Days Friday or Saturday, and still fit in Apple Days Sunday afternoon on Palomar that same weekend!)

Palomar Mountain Apple Festival

Everyone is invited to Palomar Mountain’s Chili Cookoff.  Make your chili at home and bring it to the Fire Station.

Saturday, October 12, 11 am to 2:00 pm
This will be a potluck so please bring good side dishes to share.  Hot cider will be provided.

Only chili dishes will be judged for the prizes.  The judging will be done by everyone who buys voting tickets.  5 tickets for $1.00.

The voting will be done placing voting tickets in a container next to the chili being sampled. The cook with the most tickets wins. There will be first and second prizes.

Stop in at the Post Office to RSVP with Lori or call 760 742-3044 and come on down for a fun afternoon!
